Hey All,
As some of you folks know, I recently bought a place in Tonga, so thought I might try out some local recipes. Haven't done this one yet, but I can just taste it by reading it.
Confetti Coconut Salad
1 cup coconut (grated) 1 cup carrot (grated) 2 cups green papaya (grated) 1 cup capsicum (diced) 4 tomatoes (diced)
Dressing 2 limes (juiced) ½ cup coconut milk 1 tbs soya sauce 1 tsp sugar Salt and pepper to taste
1. Mix all salad ingredients in bowl 2. Combine & mix dressing ingredients 3. Pour dressing over salad and mix 4. Serve in coconut halves - ( don't know about that one, but would wooden bowls do ? )

Everything looks really great, except for the coconut milk ...( 1 cup ) which has a high energy value.....
Calories 552 (2307 kJ) Calories from fat 515 % Daily Value 1 Total Fat 57.2g 88% Sat. Fat 50.7g 254% Cholesterol 0mg 0%
Mind you, you're not eating a cup of the stuff.... just used in the dressing.

Ah Jeeeez Colin ! Poi is from Hawaii, and kava is from Fiji ! But I'll still accept your yacht pulling into the Harbour of Refuge, for the rainy season, and giving us all a concert for the international yachtee's from the stern. Apparently it's called the "milk run" from CA to Tonga, in season, because the going is just naturally easy, then you sit for a few months and catch the winds back to the US. cheers, niteshift

Yep ! They have actually re-designed the planes for domestic flights to accommodate the larger girth.
In Tonga, weight means wealth, though these days that is changing.
