Once you have start a score, what happens or how do you add another instrument without starting over?

Have you gone through the tutorials or the quick start vidios? If not, I strongly recommend doing so. You will be amazed how helpful that will be.
Try looking up words like instrument in the index of the user manual.

Dear Q. Do you have Finale Notepad 2007 or the big Finale program?

In Print music, you click the treble clef staff in the tool bar and have an option to "add staff". Click that and it will bring up the instrument list and you can add an instrument.

I use Finale Print Music 2007 to do the basic score after I've written something on guitar. The piano, drums, bass, strings, BUT when I play it back through my Yamaha Port. Grand, sometimes an instrument repeats itself taking the place of one that I added. Like this:
Piano good Bass: good Drums: good Strings: good
Then, say, say flute: sounds like the strings!
Can anyone explain or give a solution. I know, maybe its the Yamaha keyboard's limitation. But I know it plays demos that seem to have many more voices, unless they are so well placed in timing tht they don't actually compete with each other.
Would appreciate any help.
