Hello all.

i am working my way back ontothe boards slowly...
here is a recipe i wrote for the best burritos ever. (if you happen to live in southern california, it is similar to the taco stands on the coin operated laundry side of town...
since i only cook these for my wife and i i only can do the ingredients for 4 burritos...

2 pounds of fresh skirt steaks (these may be markesd as breakfast steaks)
1 red onion
1 white onion
1 yellow onion
2 large tomatos
half a bunch of green onions (chives)
1 tub of sour cream
2 avacados and 1 pkg of guacamole mix
1 patch of fresh cilantro.
table spoon of butter.
package large burrito sized tortillas
half pound of shredded cheese (mexican style)
lime

strart out by chopping the onions and tomatos into small dices
add finely chopped cilantro and the juice from the fresh lime (jalapenos optional) mix them together and set them aside.

i feel bad explaining how to make the guacamole... it tells you how to do it on the package... just ensure you get soft enough avacados, and follow the instructions on the package. place to the side

warm a large frying pan at medium heat and melt a little of the butter. place your steaks in the warm pool of melted butter, and cook till browned on the outside flipping occasionally to ensure even cooking. when still hot, cut the steaks into 1/4 inch strips and then 1/2 inch lengths place the cooked meat in a bowl.

your large frying pan now has steak juice in it as well as the remnants of butter... if you wet a wad of paper towels and wipe it out while it is still hot and leave it on the stove.

with your clean large frying pan, turn the burner all the way up.and place a tortilla in the pan. spin the tortilla lightly with your fingers, and flip it when it begins to blister. (the tortilla not your hand) pull out the tortilla when the the other side blisters, and place it on a plate. place steak, cheese, sour cream, guacamole, and fresca on in that order, and roll the burrito up by flipping up the sides, and then rolling it from one of the sides that is still round to the other side which is also still round. (it is more of an art than a science) you can only truely make one at a time. so get people eating as they are ready. garnish with corona, or margaritas

Did these up the other day. This recipe is a quite good burrito recipe. Of course we did use our own most excellent guacamole. ;-)

I dunno, all the migrants from Mexico and Farther south that I've ever worked with and eaten with over the years considered it a burrito/burro if it's wrapped.
I'm guessing you're calling fajita due to the skirt steak. That is pretty much a Texas thing, IMO, and most other areas I've eaten that type of food, including here in SoCal, a fajita can have chicken, pork, and other beef on it and it's still a fajita unless it's wrapped.

Hm, Gary I don't see anything about grilled. Enlighten me, the closest thing I see is doing a quick heat of the tortilla. 'Course I have bad eyes. wink

the only thing that makes a burrito a burrito is the fact that it is wrapped... you can put anything in them... even grilled steak...

lol....don't ever order food in Texas cause if you ask for grilled skirt steak u get a fajita, I WON'T KEEP ARGUING ABOUT IT NO MORE LOOK IT UP ON THE INTERNET THE SKIRT STEAKS WERE FIRST COOKED UP AT THE KING RANCH BACK IN THE 30'S AND THEY WERE CALLED FAJITAS NOT BURRITOS!

gary you are right skirt steak makes awesome fajitas... and great burritos... its all about the presentation... this was a great burrito recipe... and it wasnt even grilled...lol
