I am new to the songwriting business and I am at the point I am ready to make a demo to start pitching my songs, but I really don't know anything about recording equipment. I was hoping for Christmas this year I might ask for some recording equipment to get me started. What are the bare bones necessities for me to record a demo from my home? I'm not looking for a recording deal, only to get my songs recorded. It's basically me and my guitar.

If you are a superb singer--thoroughly professional--and a very competent guitar player, than you can make decent recordings by simply adding a nice mic and a nice mic preamp to your computer, along with some type of audio recording software. There are a bunch for under $100, and some freeware.
If you are not a good singer and player, simply go to a reasonably priced demo studio and get your songs done for a couple hundred bucks.
Resist, with all your strength, the temptation to do full-band recordings at home, playing all the instruments yourself. Do it if it gives you pleasure, and have fun with it. Then hide the recordings from everybody but your loved ones. Do not submit these recordings as demos. Simple guitar/voice is the way to go, unless you can afford to go into a pro studio and do a full-band demo the right way.

I do own a computer.
I've never used a preamp or any computer recording software. What should I look for when I start shopping around? Any suggestions on specific brands, etc.?
Where could I go to check out the freeware?
I would not say that I am a superb singer. I'm actually considering using a couple of my friends who are better equipped vocally and musically when I get ready to record. I thought I might give it a try myself at first and see how it sounds.
I definately don't want to send anything out that doesn't sound good. I guess it doesn't matter how good the songs are if a publisher can't stand to listen to my voice!

Well if you have a Mac, Garageband is a great entry level recording program. Easy to use and lots of things to play with. A simple mic pre/sound card plus a decent mic and you're in business to create a demo. For sound cards with mic pre's I'd recommend anything by MOTU, M-Audio, or even the M-box series. For a mic I'd recommend anything by Sennheiser, or the trusty standby known as the Shure SM58. If you're on a PC. I think Cakewalk is still around or even Cubase.
